Let’s face it, we are all spending more time at home as we try to flatten the curve. Last week we talked about the therapeutic benefits of baking in managing depression and anxiety. We are all a little on edge these days with the outbreak of COVID-19. Perhaps this week our recipe can focus on a chocolate masterpiece since chocolate is a natural anti-depressant! I know chocolate always adds a skip to my step! These little cookie dough truffles covered in chocolate should keep everyone’s mood up for a bit.
Cookie Dough Truffles
Ingredients:
- ½ cup butter, softened;
- ¾ cup brown sugar;
- ¼ cup white sugar;
- 2 teaspoons vanilla;
- 2 tablespoons milk;
- 1-1/2 cup flour;
- 1 cup semi- sweet chocolate chips;
- 2 cups milk chocolate chips, melted.
Mix ingredients #1-5 until smooth. Add in flour using your hands to thoroughly combine the dough. Fold in semi-sweet chocolate chips. Roll dough into little balls of cookie dough (as big as you like) and place on a cookie sheet. Refrigerate dough for 10 minutes to slightly harden. Melt milk chocolate chips in a microwave-safe dish until smooth. Dip cookie dough balls into melted chocolate and set on a cookie sheet to harden. You can add sprinkles or colored candy to shell for a hint of color! Refrigerate truffles for 15-20 minutes until milk chocolate shell is hardened. Transfer to an air-tight container and keep refrigerated. ENJOY!
